Seeing as how Alucard is part vampire, it's worth going over some permissions shenanigans!
Can Alucard smell whether you have blood or not? Since I realize that not everyone he's going to encounter is even going to be totally organic.
If you aren't human but you have blood, can Alucard determine that you are not human? For example, if you look human but it totally turns out that you're a dragon in disguise, can Alucard figure out that they aren't human? Not necessarily would he be able to figure out what species you are, but he could at least figure out "hey this one ain't human".
If you have blood and assuming Alucard drinks from it, would he sustain the same nutrients from it as he would a human? I'm leaving this one totally up to you as a player.
If Alucard smells or drinks your blood, what can he determine from your character? Basically an idea of your character's health, what their blood might be like based on what they eat, etc.

If you aren't human but you have blood, can Alucard determine that you are not human? Anthy is arguably human, so n/a. I don't know if he can tell that she's like . . . fucking old? Pretty much immortal? From the blood, but I'm fine with it if he wants to sense something's weird there.

He has a lot of scars from old injuries but nothing chronic, and he likes to cook simple healthy meat+veg meals. Used to smoke but quit, has a glass of wine occasionally with food.

Does his best to keep kosher but idk if that's a specialized diet enough to make a difference. The iron in his blood is a little magnetically charged but idk if that would be noticeable or not.

Well technically he hasn't fucked his proper body up much yet, but Lucifer's soul has been outside of his body for a VERY LONG(read:centuries) time, so it might be really stale??? And/or taste of brimstone. He doesn't have much of a diet currently, and probably hasn't eaten in a long time aside from the gross space replicator foods.
Later on he will probably be disgusted with the amount of drugs and booze he happily puts into his body though. Kira is a garbage boy

Actually, because of his combined smoking, drug use, and bad diet, he probably tastes pretty gross.

Terezi is an alien, and while they are very human-adjacent, trolls have some notable differences biologically. She would be a meal, but I think it'd be like drinking a soda: it fills you up, but it doesn't do much for you.
She tastes like the liquid blue raspberry fun dip, though.

She is equally likely to eat a healthy, well-balanced meal with a focus on fruits/vegetables as she is to eat an entire stick of butter for lunch. She is also noticeably cooler in temperature than humans: the bluer a trolls blood, the colder they are. Terezi's only midway up the hemospectrum, but she's pretty clearly Not Human.

However, he is a human who has spent around 1000 years in purgatory as a spectre and has been reincarnated before — he's retained the memories of his reincarnation, so he is a rather weird existence.

In Duplicity, starting out, Jonathan is going to be feeding on rats because he's trying to control his hunger for humans. Also possibly that he is the Progeny of an extremely powerful vampire. He is basically the vampire grandson of The Oldest Mother Vampire in his canon.

He ate pretty well before arriving and would be taking full advantage of the 24/7 room service provided to the public housing in the Up. Think typical Japanese diet overall with occasional fast food, also eats a lot of strawberry Pocky. He doesn't smoke or do drugs but he will sometimes get drunk. He doesn't exercise for the sake of exercise but he runs most everywhere so he gets plenty of it.

After a near-death experience, Victor is changed and has the ability to control pain and nerves (his warnings and opt-out stuff is here) and in his world considered to be an ExtraOridinary/EO. He's also recently properly died and been brought back, but he's not entirely in one piece. Alucard would be able to tell there are certain "strings" inside Victor that aren't all connected up and he's actually not very well in a steady down-tick kind of way so he might "taste" a low or high level buzzing, depending on when he drinks and some days Victor would taste relatively healthy-ish and well and other times like he was on the very brink of death.
